Our presenter for the Food Waste and Reuse program is Terri Riutcel, MD. Founder of a social
enterprise group called Table to Garden, Terri’s passion for the last several years has been
helping people in our communities keep food scraps out of the landfill. Her family makes its
home on a former farm of nine acres near Caseyville. Her past careers include Air Force
physician and Washington University physician specializing in behavioral sleep medicine.
Every year in the United States 31 percent or 133 billion pounds of the food supply in the country
is wasted which impacts food security, resource conservation and contributes to the 18% of
methane gas that comes from landfills. This program will provide an overview of the food waste
problem, both local and big picture. We will learn what we can do as individuals to make a
difference through changes in our shopping, sharing and donating. We will hear about other
entities in our communities that are interested and involved in helping with this issue. There
will also be some “tasting” opportunities.
